Peaches
Lemon Juice
Honey
Water
You will want to make sure your jars, lids, and rings are sterilized.
Peel the Peaches
The easiest way for me to peal the peaches was the blanch them. I washed them and then put them in a pillow case.
I then put the pillow case full of peaches into a pot of boiling water for 2-3 minutes, then straight into an ice bath. The skins should pull off quite easy. If not repeat the blanching process.
Cut in half and remove the pit
Once skinned I cut my peaches in half and pitted them. Fill the jar up to right underneath the threads, an inch below the top of the jar.
This will help the peaches hold their color.
Mix 3/4 Cup of Honey to 10 Cups of Boiling Water
I brought 10 cups of boiling water to a boil and added 3/4 cup of honey to it and let it dissolve. Fill each jar with the mixture to cover peaches. Make sure to only fill up to right underneath the threads.
Place Lids and Rings on jars
Clean each jar and make sure there is no juice around the threads. This will prevent the rings from sticking and make it much easier to open. Make sure the lids are in boiling water before you place on jars. Then put on rings.
Place the jars in the water bath
I then placed the jars in my water bath and filled the water up to the top of the jars. Then turn your burner to high and bring the water to a boil. Once boiling put the lid on, and boil for 20 minutes. After 20 minutes turn off the heat and let the water settle.
Remove jars from pot carefully
Remove your jars from the water carefully. You do not want the jars to touch each other. Set aside and let cool. Do not mess with them. If processed properly you will hear the lids "pop" or "seal" on there own. The peaches will float to the top. If not, no problem. Just pop them in the fridge and eat them whenever!
There you have it! Canned peaches with no sugar!
